Yes, we use an RME PCI card with 24 channels of ADAT input fed from the ADAT output cards in our board.

Look at the type of output you have available on your board and get an interface for that.

But is of only. It's great because it's direct mp3 and the file is created with the date so it's ready for direct upload.

We just use a Zoom recorder with direct xlr input - records as mp3 onto a sd card. Then just transfer to computer.

We record directly into Audacity. Then use that to burn our master disc and upload for the podcast.

We've used Audacity for a while, and even though our new mixing desk - a Yamaha LS9 - records MP3 straight to a USB stick, we still copy that into Audacity to add Meta data and re-sample it for use on the web (we could still record straight to Audacity, but the direct desk quality is better than the computers sound card).
On the server we run a program Dircaster which reads the Meta and automatically creates an iTunes compatible RSS stream, so all the volunteers have to do is upload it and people can download the sermon to their phones before even leaving the chapel.
