Typically if you put a lav on the preacher that is enough to pick up everyone.

When I taped my cousin's outdoor wedding a few months ago we put one SM58 on the ground between the front row and the wedding party (used a Y shaped twig to point it upwards) and hid one mic in the greenary on the gazebo thing they were standing under. Doesn't sound amazing but you can hear every word said!

I clipped a lav on the top of the pastor's folder that held his script (pastor was wearing a countryman) . He was facing the bride as she repeated her vows and the groom as he repeated his, so the lav was aimed correctly.

Never got to hear the recording, but the live sound was OK. I did have to ride the fader, though.

I've put a omni lav on the groom. For the vows it easily picks up both the bride and groom. It blends right in with the tux (assuming he is wearing a tux).

I have to agree with the Lav on the groom and an E6 on the pastor. Brides are not going to want a black microphone on their white dress. Another option is to use a shotgun microphone that typically would be used for video production. Put a windscreen on it and have someone standing near it ready to aim it at the couples as they give their vows.
