We currently record or services on a Tascam cd-recorder using 1 of the AUX sends so that we can mix the recording on the fly. We then rip the cd to a MP3 using iTunes then the mp3 is pulled into Adobe Sound Booth where we edit the service save it as a mp3 again and upload that to our podcast host. We also have a Korg D-3200 to record a multi-track service that can be edited and saved as an mp3. No dedicated pc's just for recording. Also the Tascam comes in handy to dub tapes to cd.

The noise removal feature in Audacity itself is quite useful in dealing with these problems. Simply sample a short portion where only the hiss is present (i.e. no talking) then apply the fix to the whole recording. It works well.

Well, the first step would be to figure out where the hiss is being introduced into your device chain and see if you can eliminate it. Since you're using Audacity, I'm going to guess you're pulling a feed off your sound board and plugging it into the line in on a sound card in a PC. Am I right?

If so:
  1. What brand/model is your sound board?
  2. What output are you plugged into on your sound board?
  3. What kind of cable are you using between the sound board and the PC?
  4. What kind of connectors are on each end of the cable and how were they connected to the cable (solders, crimped, etc.)?
  5. What brand/model is the sound card in the PC?

You might consider your gain structure. Do you also get a hiss from your speakers when the sanctuary is quiet? Is you main fader on your mixer during a service well below unity? If you're recording a copy of what is going to your mains, then signal to noise ratio may be the culprit.
